Apricot and almond cake

Apricot and Almond cake (vegan)

Ingredients

  • 10 oz plain flour
  • 4 oz sugar
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 5 oz soft dried apricots (chopped)
  • 3 oz ground almonds
  • 1 tsp almond extract
  • 4 oz soya margarine
  • 2 tbs golden syrup
  • 150 ml soya milk

Topping

  • 1 tbsp sugar
  • 2 tbsps flaked almonds

Method

  1. Line a 8-9 inch cake pan with baking parchment.
  2. Pre-heat oven to 190 C.
  3. Combine the first 6 ingredients.
  4. Melt the margarine and golden syrup, add the soya milk and extract.
  5. Pour the wet ingredients onto the dry ingredients and mix well.
  6. Spoon mixture into pan and sprinkle on the almonds and then the sugar.
  7. Bake for 45 mins.
