Easy Granola

Much cheaper than commercial varieties and more fun!

Ingredients

  • 200g fine oats
  • 1 tablespoon coconut oil, melted  (or any other mild flavoured oil)
  • 1 tablespoon runny honey or maple syrup
  • Pinch of salt
  • 1 teaspoon vanilla extract or 1 teaspoon ground cinnamon
  • Other ingredients, as liked:  100g dried fruit. Lots to choose from! Try a combination of your favourites. Chopped apricots/dates/prunes, mango/ apple. Scissors may be easier than a knife! Or raisins, currants and sultanas. 50g chopped nuts and seeds of your choice. How about a couple of spoonfuls of 4 seed mix and make up the 50g with chopped Brazil nuts or almond flakes?

Method

  1. Preheat the oven to 180 degrees.
  2. Mix the melted oil with the honey. Add the vanilla or cinnamon.
  3. In a large bowl, weigh out the oats.
  4. Stir the oil mix into the oats until they start to clump together.
  5. Turn the granola out onto a baking tray and spread it out.
  6. Bake for 15 minutes, giving it a good stir half way through.
  7. Remove from the oven when it is cool.
  8. Tip it a large clean bowl.
  9. Add other ingredients of your choice.
  10. Store in an airtight container.
