Quinoa salad
With the sunny weather it's salad time and in trying to re-create a couscous salad I'd made some time ago but without the aid of the cook-book or any couscous, I ended up making some tasty quinoa salad instead.
Makes enough for 8-10
Ingredients
- 2 cups quinoa
- 3-4 cups water
- salad stuff e.g
- half a cucumber
- 2 sticks of celery
- 4 spring onions
- 1 yellow pepper
- herbs e.g
- parsley
- coriander
- mint
- olive oil
- lemon
- salt and pepper to taste
Method
- Rinse the quinoa and drain, then simmer with the 4 cups water for 10-15 mins until the water is absorbed. When it's cooked you'll be able to see little crescents shapes.
- Meanwhile, chop the salad stuff and herbs. There are lots of options here. Small tomatoes would probably work well. In the second incarnation of the salad we used herbs scavenged from the garden including mint & fennel. But go easy on the mint as it's quite strong.
- Finally mix everything together. It's good to do this while the quinoa is still warm as it helps to blend the flavours. Chill and serve.
Keeps well in the fridge overnight.
