Savoury Italian Pancakes

Ingredients

For filling:
1 dessertspoon olive oil
1 garlic clove, crushed
1 onion, finely chopped
500g beef mince
2 carrots, finely chopped
1 tablespoon tomato puree
1 (400g) tin chopped tomatoes
250ml beef stock
1/2 tsp salt
1/4 tsp pepper
1/4 tsp dried herbs
Method
Make the pancakes using our Italian Pancakes recipe.
- Heat the oil in a large saucepan and brown the garlic, onions and mince.
- Add the carrots and celery and cook until tender.
- Stir in the puree, stock, tomatoes and herbs. Cover and simmer for 40 minutes.
- Strain the sauce and keep the liquid warm.
- Stuff and roll the pancakes with the meat mixture and place into a greased dish.
- Spoon the Bolognese sauce liquid over the pancakes and top with grated cheese of your choice.
- Bake at 180 degrees for 25-30 minutes – or until the top is slightly browned and bubbling
