Chocolate spice cake

Chocolate buttons

This delicious cake recipe is full of festive spices so would make a perfect addition to the extra supplies required for hungry seasonal visitors! Thanks to our wonderful chair Cathy for sharing this recipe.

Ingredients

  • 115g margarine
  • 200g sugar
  • 60g melted plain chocolate buttons plus additional for decorating
  • 2 eggs (yolks and whites separated)
  • 170g self raising flour
  • ½ teaspoon cinnamon
  • ½ teaspoon mixed spice
  • ¼ teaspoon ground cloves
  • 8 tablespoons milk

Method

  • Cream together margarine and sugar
  • Blend in melted chocolate and egg yolks
  • Mix flour and spices then blend into mixture alternately with milk
  • Whisk egg whites to stiff peaks and fold into mixture
  • Spoon mixture into 20 cm (8 inch) square cake tin
  • Bake for about 45 minutes
  • While the cake is cooling on rack, put chocolate buttons all over the top of the cake. Spread them when melted, then leave to set.
