Spiced Plum Sauce

Ingredients

10 plums, stoned and quartered 

1 apple peeled, cored and cut into chunks

1 small onion, peeled and chopped

1 clove of garlic, peeled and chopped 

8 fl oz/200 ml white wine vinegar (I have used cider vinegar successfully)

4 and a half oz/125g raw cane sugar 

4 and a half oz/125g muscovado sugar 

1/2 in/1cm root ginger, peeled and sliced 

2 chillis, chopped 

1 tsp Chinese five-spice mixture

1/2 stick cinnamon 

1 star anise

Method

Put everything in a large pan and simmer for 90 minutes, stirring occasionally. Remove the cinnamon, star anise and the chilli (or leave the chilli in for a hot sauce). Liquidise and pour into a jar. 
Use as a dip or a marinade!
