These coconut cookies are a delicious treat and are made from simple store cupboard ingredients that can all be found at True Food!
Ingredients
- 150g organic fine oats
- 100g plain flour
- 60g organic dessicated coconut
- ½ tsp bicarbonate of soda
- 50g soft light brown sugar
- 85g butter, cubed
- 50g coconut oil and 35g butter melted together
- 1 tsp apple cider vinegar
Method
- Start by melting the 50g coconut oil and 35g butter, and setting aside to cool slightly.
- Combine the oats, flour, sugar, bicarbonate of soda and dessicated coconut in a large mixing bowl.
- Add the cubed butter to the dry ingredients and rub together to a fine breadcrumb consistency.
- Add the apple cicder vinegar to the cooled melted fats and add this liquid to the dry mix. Stir until well combined.
- Roll the mixture into balls, about the size of a ping pong ball, then transfer to a lined baking tray and flatten slightly.
- Space each one out on the tray because they will spread when baked.
- Place in the fridge for at least 30 minutes before baking.
- When ready to bake, heat the oven to 180°C/170°C fan and bake the cookies for about 15 minutes, or until nicely golden. The baking time will depend partly on the size and thickness so keep an eye on them!
- When golden, remove from the oven and leave to cool and firm up before taking them off the tray.
