Oaty coconut cookies

Coconut cookies

These coconut cookies are a delicious treat and are made from simple store cupboard ingredients that can all be found at True Food!

Ingredients

  • 150g organic fine oats
  • 100g plain flour
  • 60g organic dessicated coconut
  • ½ tsp bicarbonate of soda
  • 50g soft light brown sugar
  • 85g butter, cubed
  • 50g coconut oil and 35g butter melted together
  • 1 tsp apple cider vinegar

Method

  • Start by melting the 50g coconut oil and 35g butter, and setting aside to cool slightly.
  • Combine the oats, flour, sugar, bicarbonate of soda and dessicated coconut in a large mixing bowl.
  • Add the cubed butter to the dry ingredients and rub together to a fine breadcrumb consistency.
  • Add the apple cicder vinegar to the cooled melted fats and add this liquid to the dry mix. Stir until well combined.
  • Roll the mixture into balls, about the size of a ping pong ball, then transfer to a lined baking tray and flatten slightly.
  • Space each one out on the tray because they will spread when baked.
  • Place in the fridge for at least 30 minutes before baking.
  • When ready to bake, heat the oven to 180°C/170°C fan and bake the cookies for about 15 minutes, or until nicely golden. The baking time will depend partly on the size and thickness so keep an eye on them!
  • When golden, remove from the oven and leave to cool and firm up before taking them off the tray.
