Ingredients (Serves 2)
150g Cornwall Pasta.Co Lumaconi pasta
2 large fresh tomatoes, deseeded and cut into thick strips
1 small red onion, thinly sliced
1/2 preserved lemon, very finely chopped
100g Cypressa feta cheese
2 tbsp olive oil
handful of flat-leaf parsley (or your favourite herb) shredded
Method
Cook the pasta according to the instructions.
Meanwhile put the tomatoes, onion and lemon in a large serving bowl. Crumble the feta over, drizzle with oil and and scatter over the herbs.
When the pasta is cooked, drain well and mix in to the tomatoes etc.
