A refreshing salad for hot summery days that makes the most of the gorgeous organic watermelons in store now.
Ingredients
- 180g watermelon
- ½ cucumber
- ½ bunch mint, chopped, leaving a few whole leaves to garnish
- 1 tbsp olive oil
- 100g Cypressa Feta Cheese
- 1 tbsp Biona Balsamic Vinegar
Method
Chop the watermelon and cucumber into chunks and tip into a bowl with the chopped mint and drizzle with 1 tbsp olive oil. Season and pile on to a serving plate. Crumble over the feta, remaining mint leaves, then drizzle with 1 tbsp balsamic vinegar just before serving.
