Millet is a gluten free grain with a mild corn-like flavour, and goes well with roasted vegetables as a side dish, or added to stews for additional texture. It can also be cooked for an extended time with extra liquid to make a gluten free porridge.

Add approximately 1 part millet to 3 parts water in a saucepan and bring to the boil. Turn down to a simmer and cook for about 15-20 minutes, or until it is tender but still keeping its shape in separate grains. Drain any excess water and leave to stand for a few minutes before serving.
