With British apple season in full swing, this apple cake is a delicious way to use them up. All the ingredients can be found at TrueFood, including the new organic caster sugar available as a refill! It’s great as it is with a cup of tea, or makes a tasty pudding served warm with cream or custard.
Ingredients
- 2 medium sized apples, peeled, cored and finely diced
- 175g Butter or margarine
- 175g organic caster sugar – NEW to the TrueFood refill selection
- 175g Doves organic self-raising flour
- 30g organic ground almonds – available as a refill from TrueFood
- 3 organic eggs, beaten
- 1tsp vanilla extract
Method
- Start by combining the butter, sugar and vanilla, and beating well until it starts to lighten in colour – this should take a few minutes in a food processor, or a bit longer if beating by hand but is an important step to ensure your cake is light and spongy.
- Add 2 tbsp of the flour, followed by the eggs and mix well.
- Add the rest of the flour and the ground almonds, along with half the diced apples, and gently mix until well combined with the rest of the mixture.
- Add the milk and gently stir in.
- Pour the batter into a lined cake tin (this works well as a traybake in a 20x20cm square tin) and sprinkle the remaining apple pieces on top.
- Bake at 180 degrees C or 170 degrees C fan for about 30 minutes, until the cake is golden and a skewer comes out clean when inserted into the middle of the cake.
